  • 1 ripe avocado
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup diced cucumber
  • 1 tablespoon olive oil

  • Chili flakes (optional)
  • Fresh herbs (like cilantro or parsley) for garnish

Instructions

  1. Bring the water or vegetable broth to a boil in a pot.
  2. Once boiling, add the rolled oats and reduce the heat to a gentle simmer.
  3. Cook for about 5 minutes, stirring occasionally to prevent sticking.
  4. While your oats simmer, scoop out the ripe avocado into a bowl and mash it lightly with a fork until creamy.
  5. When the oats are cooked, stir in the olive oil, seasoning with salt and pepper to taste.
  6. Serve the oatmeal in bowls, generously topping it with mashed avocado, halved cherry tomatoes, and diced cucumber. For that extra kick, sprinkle some chili flakes and fresh herbs over the top. Enjoy!
