Savory Cottage Cheese Muffins

Delightful muffins made with creamy cottage cheese, fresh vegetables, and melted cheese—perfect for breakfast or snacks.

  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup whole wheat flour
  • 1 cup grated cheese (cheddar or mozzarella)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mixed vegetables (e.g., spinach, bell peppers, onions, carrots)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with liners or grease it.
  2. Whisk together the cottage cheese, eggs, and olive oil in a large mixing bowl until well blended.
  3. Combine the whole wheat flour, baking powder, baking soda, salt, and garlic powder (if using) in a separate bowl.
  4. Fold the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Gently fold in the grated cheese and mixed vegetables.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick comes out clean.
  8. Allow to cool slightly before removing from the tin.

Notes

For best results, do not overmix the batter. Customize with your favorite veggies or cheeses!
