Savory Cottage Cheese Muffins

Delicious and nutritious muffins made with cottage cheese and colorful veggies, perfect for breakfast or a snack.

  • 1 cup cottage cheese (fresh, room temperature)
  • 3 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ½ cup oat flour (or all-purpose flour)
  • ½ tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt (to taste)
  • ½ cup diced bell peppers
  • ½ cup chopped spinach or zucchini
  • Olive oil spray (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or line it with muffin liners.
  2. Beat the eggs in a large mixing bowl until smooth and frothy.
  3. Stir in the cottage cheese and shredded cheese until well combined.
  4. Add the oat flour, baking powder, garlic powder, black pepper, and salt to taste. Mix until just combined.
  5. Fold in the diced bell peppers and chopped spinach or zucchini.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes, or until the muffins are golden.
  8. Allow to cool slightly before transferring to a wire rack.

Notes

For better results, make sure ingredients are at room temperature before mixing. Feel free to substitute different vegetables and cheeses for variety.
