Savory Sausage Egg Bites

Delightful breakfast bites made with fluffy eggs, crumbled sausage, creamy cheese, and green onions, perfect for quick and satisfying meals.

  • 6 large eggs
  • 0.5 cup milk (whole or 2%)
  • 0.5 cup cooked breakfast sausage (crumbled)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup green onions (chopped)
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or silicone mold well.
  2. In a skillet over medium heat, cook the crumbled sausage until browned and fully cooked. Drain excess fat and cool slightly.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth.
  4. Gently fold in the cooked sausage, shredded cheese, and chopped green onions.
  5. Evenly divide the mixture among the muffin cups, filling each about 3/4 full.
  6. Bake for 20-22 minutes, or until the egg bites are set and golden on top.
  7. Remove from the oven and allow to cool slightly before serving.

Notes

These bites are great for meal prep and can be refrigerated or even frozen for later use.
