Instructions

  1. In a bowl, whisk the eggs until fully combined. Season with salt and pepper to your taste.
  2. Heat the butter or oil in a non-stick skillet over medium heat. Wait until it melts or gets hot.
  3. Pour the egg mixture into the skillet, allowing it to sit undisturbed for a few seconds to create soft curds.
  4. Gently stir the eggs with a spatula, cooking them gradually until they’re soft and fluffy.
  5. Once cooked to your liking, remove the skillet from the heat. Top your scrambled eggs elegantly with sliced avocado. Serve immediately with fresh herbs if desired.
