Simple Oatmeal Protein Cookies

A healthy treat packed with protein, perfect for breakfast or snacks any time of the day.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, protein powder, baking soda, and salt.
  3. Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Mix until well combined.
  4. If using, fold in the chocolate chips.
  5. Scoop tablespoon-sized balls of the mixture onto a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with the back of a spoon.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool before serving. Enjoy as a quick breakfast or snack!

Notes

Store in an airtight container for up to a week. You can freeze the cookies for up to three months.
