  • Salt and pepper to taste

  • 1/4 cup Greek yogurt
  • 1 tablespoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potato cubes in a mixing bowl with olive oil, cinnamon, salt, and pepper until they’re evenly coated.
  4. Spread the seasoned sweet potato cubes on a baking sheet in a single layer.
  5. Roast for about 25-30 minutes, or until tender and slightly caramelized.
