Sweet Potato Orange Hash

A delightful blend of vibrant vegetables, zesty oranges, and perfectly baked eggs, creating a comforting and refreshing dish.

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 medium oranges, peeled, segmented, and cut into chunks
  • 2 cups baby spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper.
  2. Combine the diced sweet potatoes, red bell pepper, and red onion in a large mixing bowl. Drizzle with olive oil and sprinkle with smoked paprika, cumin, garlic powder, salt, and black pepper. Toss until well-coated.
  3. Spread the seasoned veggies out in a single layer on the prepared sheet pan. Roast for about 20 minutes, stirring halfway through for even cooking.
  4. Remove the pan from the oven and gently fold in the orange segments and baby spinach.
  5. Create four small wells in the mixture and crack one egg into each well.
  6. Return the pan to the oven and roast for an additional 8 to 10 minutes, or until the sweet potatoes are tender and the eggs are cooked to your liking.
  7. Finish by sprinkling crumbled feta cheese and fresh herbs on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, adding an extra egg for freshness if desired.
