Zesty Avocado Egg Salad

A delicious twist on classic egg salad, combining creamy avocados and protein-packed hard-boiled eggs for a refreshing and nutritious dish.

  • 4 hard-boiled eggs
  • 1 tablespoon lemon juice
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Chopped fresh dill or parsley
  • Cherry tomatoes (optional, for garnish)

Instructions

  1. Mash the ripe avocados with a fork until smooth and creamy.
  2. Chop the hard-boiled eggs and gently fold them into the mashed avocados.
  3. Stir in the lemon juice, Greek yogurt, and Dijon mustard until well combined.
  4. Season with salt, pepper, and the chopped fresh herbs to taste.
